Ingredients

Ingredients
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon brown sugar
  • ¼ teaspoon salt
  • 1 pound ground turkey (93% lean)
  • 1 large egg
  • ¼ cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 burger buns
  • 4 slices provolone or Swiss cheese
  • Lettuce and tomato for serving

Method

Instructions
  1. Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook for 5 minutes, stirring occasionally. Reduce heat to medium-low and continue cooking for 20-25 minutes, stirring every few minutes, until onions are soft and golden brown. Add balsamic vinegar, brown sugar, and salt. Cook for another 2-3 minutes until the vinegar reduces slightly. Remove from heat and set aside.
  2. In a large bowl, combine ground turkey, egg, breadcrumbs, minced garlic, Worcestershire sauce, oregano, smoked paprika, salt, and pepper. Mix gently with your hands until just combined – avoid overmixing to keep the patties tender. Divide the mixture into 4 equal portions and shape into patties about ½-inch thick.
  3. Heat a grill or skillet over medium-high heat. Cook the turkey patties for 5-6 minutes per side, or until internal temperature reaches 165°F. During the last minute of cooking, place a slice of cheese on each patty to melt.
  4. Toast the burger buns lightly if desired. Place each cooked turkey patty on the bottom bun, top with a generous spoonful of caramelized onions, lettuce, and tomato. Serve immediately while warm.

Notes

Don't overmix the turkey mixture to avoid tough patties. Be patient with caramelizing onions - low and slow cooking is key. Use a meat thermometer to ensure turkey reaches 165°F. Caramelized onions can be made 3 days ahead. Choose sturdy buns like brioche or potato buns.
