Orange Cranberry Bread

A delightful bread that combines the sweetness of orange with the tanginess of cranberries, perfect for breakfast or brunch.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the orange juice, vegetable oil, egg, and orange zest until combined.
  4. Gently combine the wet ingredients with the dry ingredients, and fold in the cranberries.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 50-60 minutes until a toothpick comes out clean.
  7. Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack.
  8. For the glaze, mix powdered sugar with 2-3 tablespoons of orange juice until smooth.
  9. Drizzle the glaze over the cooled bread and allow to set before slicing.

Notes

For extra flavor, add chopped nuts or a pinch of cinnamon to the batter.
