1 lb Italian sausage
4 medium potatoes, diced
1 bunch kale, chopped
1 onion, diced
4 cups chicken broth
1 cup heavy cream
2–3 cloves garlic, minced
In a large pot, over medium heat, add the Italian sausage. Sauté until browned and crumbly, about 5-7 minutes. Drain excess fat if needed.
Stir in the diced onion and minced garlic to the pot. Sauté for an additional 3-4 minutes until fragrant.
Pour in the chicken broth, then add the diced potatoes. Bring the mixture to a boil, then reduce heat to a simmer.
Let the soup simmer for about 10-15 minutes or until the potatoes are tender.
Stir in the chopped kale and cook for an additional 5 minutes until it wilts.
Finally, stir in the heavy cream and simmer for another 5 minutes. Season with salt and pepper to taste.
