Zesty Olive Garden Salad

Enjoy a homemade version of the classic Zesty Olive Garden Salad, filled with fresh vegetables and a tangy dressing.

  • 8 cups chopped Lettuce
  • 1/4 cup shredded red cabbage
  • 1/4 cup julienned Carrots
  • 1/4 cup Red onion
  • 1/2 cup black olives
  • 2 pieces Roma tomatoes
  • 1/3 cup pepperoncinis
  • 1 cup croutons
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup extra virgin olive oil
  • 1 packet Zesty Italian Dressing Mix
  • 1/3 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon grated Romano cheese
  • 3 teaspoons sugar
  • 1 1/2 teaspoons mayo
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Wash all vegetables thoroughly. Chop the lettuce into bite-sized pieces and place it in a large salad bowl. Add the shredded red cabbage, julienned carrots, and diced red onions.
  2. Slice the black olives and Roma tomatoes, then add to the bowl.
  3. Slice the pepperoncinis into rings and incorporate them into the salad.
  4. Sprinkle croutons and grated Parmesan cheese on top.
  5. In a separate bowl, combine olive oil, Zesty Italian Dressing Mix, vinegar, water, Romano cheese, sugar, mayo, mustard, Italian seasoning, salt, pepper, and garlic powder. Whisk everything together until smooth.
  6. Pour the dressing over the salad just before serving and toss to coat evenly.

Notes

For the best results, use fresh ingredients and store the dressing separately to keep the salad crisp.
