Witch’s Cauldron Beef Stew

A hearty and comforting beef stew perfect for chilly days and gatherings, featuring tender beef, flavorful broth, and colorful vegetables.

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Olive oil for browning

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes to the pot and brown them on all sides.
  3. Once browned, remove the beef from the pot and set it aside on a plate.
  4. Add the chopped onion and minced garlic to the same pot and sauté until softened, about 3-4 minutes.
  5. Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary.
  6. Return the browned beef to the pot.
  7. Pour in the beef broth and add the sliced carrots and diced potatoes. Stir to combine.
  8. Bring the stew to a boil, then reduce the heat to low and simmer for about 120 minutes until the beef is tender.
  9. Season with salt and pepper to taste before serving.

Notes

For personal preferences, consider adding other vegetables like peas or mushrooms. If you prefer a thicker stew, mix cornstarch with cold water and stir it in during the last few minutes of cooking.
