1 lb ground turkey or chicken
1 cup ricotta cheese
4 cups chicken or vegetable broth
8 lasagna noodles, broken into pieces
1 cup spinach or kale
1 tsp Italian seasoning
Salt and pepper to taste
In a large pot over medium heat, add the ground turkey or chicken. Cook until browned, breaking it apart with a spoon. This should take about 5-7 minutes.
Pour in the chicken or vegetable broth and bring to a simmer. Make sure to scrape the bottom of the pot to release any flavorful bits.
Gently stir in the broken lasagna noodles and continue to simmer for 10-12 minutes, or until the noodles are tender.
Add the spinach or kale to the pot, allowing it to wilt for about 3 minutes.
In a separate bowl, mix the ricotta cheese with some Italian seasoning. Add it to the soup and stir until fully combined and creamy.
Taste your soup and season with salt and pepper as needed. Serve immediately for a warm, comforting meal.
