Vegan African Peanut Soup

A warm and nourishing vegan soup combining sweet potatoes, peanut butter, and fresh vegetables, inspired by African culinary traditions.

  • 2 large Sweet Potatoes (Diced)
  • 1 medium Onion (Chopped)
  • 3 cloves Garlic (Minced)
  • 1 inch Fresh Ginger (Grated)
  • 4 cups Vegetable Stock (Low-sodium preferred)
  • 1 cup Tomato Sauce
  • 1 cup Peanut Butter
  • 2 cups Chard (Chopped)
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1/2 teaspoon Cinnamon (Adjust to taste)
  • 1 teaspoon Turmeric
  • To taste Salt
  • To taste Pepper

Instructions

  1. Prep the ingredients by washing and chopping all your fresh produce.
  2. In a large pot, heat oil over medium heat. Sauté onion until translucent, then add minced garlic and grated ginger, cooking until fragrant.
  3. Add spices: ground cumin, ground coriander, cinnamon, and turmeric. Stir to toast for about a minute.
  4. Add diced sweet potatoes and stir well to combine.
  5. Pour in vegetable stock and tomato sauce, bringing to a boil before reducing to a simmer for 15 minutes or until sweet potatoes are fork-tender.
  6. Stir in peanut butter until fully incorporated.
  7. Add chopped chard and simmer for an additional 5 minutes until wilted.
  8. Season to taste with salt and pepper before serving.
  9. Ladle into bowls and garnish as desired.

Notes

Serve with warm bread or over rice/quinoa. Garnish with cilantro or crushed peanuts for added flavor.
