Ultimate Copycat Jason’s Deli Irish Potato Soup

A creamy and flavorful Irish Potato Soup that captures the cozy taste of Jason’s Deli.

  • 2 tablespoons Butter
  • 1 medium Onion, chopped
  • 1 medium Carrot, chopped
  • 2 ribs Celery, chopped
  • 3 cloves Garlic, minced
  • 3 large Russet Potatoes, cubed
  • 4 cups Chicken Broth
  • 1 cup Milk
  • 1 cup Heavy Whipping Cream

Instructions

  1. Wash and peel the potatoes, carrots, and onion. Chop the potatoes into small cubes, and finely chop the onion, carrot, and celery. Mince the garlic cloves.
  2. Melt the butter in a large pot over medium heat. Add the chopped onion, carrot, celery, and garlic and sauté until softened, about 5-7 minutes.
  3. Add the cubed potatoes and chicken broth to the pot and bring to a boil. Reduce heat to low and simmer until the potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to blend the soup until smooth and creamy. If using a regular blender, let the soup cool slightly before transferring to blend.
  5. Return blended soup to the pot and stir in the milk and heavy whipping cream, mixing well. Adjust seasoning with salt and pepper as needed.
  6. Simmer for an additional 5 minutes, then serve hot in bowls, garnished with fresh herbs or croutons if desired.
