Ingredients

Scale
  • 2 cups All-purpose flour
  • 1 cup Unsalted butter (cold)
  • 1 cup Granulated sugar
  • 4 cups Apples (peeled and sliced)
  • 1 tsp Cinnamon
  • 2 Eggs
  • 1 cup Milk
  • 1 tsp Vanilla extract
  • Instructions

  • Make the Pie Crust: In a large mixing bowl, combine the flour and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Wrap in plastic and chill for 30 minutes.
  • Prepare the Toffee: In a saucepan, melt ½ cup of sugar and ½ cup of butter over medium heat, stirring until it’s a smooth caramel. Be careful; it can burn quickly!
  • Prepare the Apples: Toss the sliced apples with the remaining sugar and cinnamon in a separate bowl.
  • Roll and Transfer the Dough: On a floured surface, roll out the chilled dough. Fit it into a 9-inch pie plate, pinching edges to create a decorative crust.
  • Layer Ingredients: Start by pouring half of the toffee into the bottom of the pie crust. Add the seasoned apples over the top and pour the remaining toffee on top of the apples.
  • Bake the Pie: Preheat your oven to 375°F (190°C). Bake the pie for 45-50 minutes, or until the apples are tender and the crust is golden brown.
  • Make the Custard: While the pie bakes, whisk together eggs, milk, sugar, and vanilla in a saucepan over medium heat. Stir constantly until the mixture thickens. Remove from heat and let it cool.
  • Serve and Enjoy: Allow the pie to cool for at least 30 minutes before serving. Drizzle with vanilla custard and enjoy!
