Toasted Coconut Soft Sugar Cookies

Deliciously soft and chewy sugar cookies infused with toasted coconut and topped with coconut butter or frosting.

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup coconut butter or frosting for topping
  • 1/2 cup toasted coconut flakes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, beat together butter and sugar until light and fluffy (3-5 minutes).
  4. Add the egg and vanilla extract, mixing until fully incorporated.
  5. Gradually mix in the dry ingredients until just combined.
  6. Gently fold in sweetened shredded coconut.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden and centers slightly underbaked.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  10. Once cooled, spread coconut butter or frosting on top and sprinkle with toasted coconut flakes.
  11. Serve and enjoy!

Notes

Store cookies in an airtight container at room temperature for 5-7 days or freeze for up to 3 months.
