Brown the sausage in a large pot over medium heat for about 5-7 minutes, breaking it into small pieces.
Add diced onions and minced garlic to the pot, cooking for an additional 3-4 minutes until translucent.
Add diced potatoes, chicken broth, and seasonings. Bring to a boil, reduce to a simmer, cover, and cook for about 15-20 minutes until potatoes are tender.
Stir in the chopped kale and cook for an additional 5 minutes until wilted.
Lower the heat and pour in the heavy cream, stirring well and letting it heat through for another 2 minutes.
Taste and adjust the seasoning with salt and pepper as needed.
Serve hot, garnished with Parmesan cheese and crusty bread.
