Thanksgiving Pumpkin Pie Cookies

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. In another bowl, whisk together the all-purpose flour, salt, and pumpkin pie spice.
  5. Gradually add the dry mixture to the butter mixture and mix until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Cut into circles using a cookie cutter or glass.
  9. In a small bowl, mix the pumpkin puree, brown sugar, and egg to make the filling.
  10. Place half of the dough circles on a baking sheet lined with parchment paper.
  11. Spoon a small amount of pumpkin filling onto each circle and top with another dough circle.
  12. Press the edges to seal and bake for 12-15 minutes or until lightly golden.
  13. Allow to cool before serving.

Notes

Consider serving with whipped cream or warming slightly for a gooey filling.
