Taco Casserole

A hearty and flavorful twist on classic tacos, featuring layers of beef, black beans, and cheese atop crispy tortilla chips.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • Optional toppings: sour cream, avocado, cilantro, salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned, then drain off any excess fat.
  3. Add taco seasoning and diced tomatoes to the beef and cook for 2-3 minutes, stirring until well combined.
  4. In a baking dish, layer half of the tortilla chips at the bottom.
  5. Spread the meat mixture evenly over the tortilla chips.
  6. Add drained black beans on top of the meat layer.
  7. Sprinkle half of the shredded cheese over the black beans.
  8. Repeat the layers with the remaining tortilla chips, meat mixture, black beans, and the remaining cheese.
  9. Top with the rest of the cheese.
  10. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  11. Let cool slightly before serving and add optional toppings as desired.

Notes

This casserole can be customized with different proteins or veggies, and is perfect for leftovers.
