Sweet Potato Turkey Chili

A comforting and nutritious chili made with sweet potatoes and ground turkey, perfect for chilly evenings or gatherings.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until soft and fragrant.
  3. Introduce the ground turkey to the pot and cook until browned thoroughly.
  4. Add the diced sweet potatoes, diced tomatoes, corn, chicken broth, chili powder, cumin, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil to help cook the sweet potatoes faster.
  6. Reduce the heat and let the chili simmer for about 30 minutes, stirring occasionally, until sweet potatoes are tender.
  7. Taste and adjust seasoning with more salt or pepper as needed.
  8. Serve warm, topped with your favorite garnishes.
