Swamp Rice Delight

A flavorful and nutritious dish combining spinach and jalapenos, making it a great option for families.

  • 2 tablespoons Olive oil
  • 1 cup Diced onions
  • 1 teaspoon Kosher salt
  • 4 cups Baby spinach
  • 1 medium Jalapeno pepper
  • 1 bunch Italian parsley
  • 3 cloves Garlic
  • 2 Scallions
  • 2 cups Basmati rice
  • 4 cups Water or broth

Instructions

  1. Prepare the Ingredients: Wash and coarsely chop the spinach, dice the onions, jalapeno, and garlic, chop the parsley, and slice the scallions.
  2. Heat the Oil: In a large skillet or pot, heat the olive oil over medium heat.
  3. Sauté the Onions: Add the diced onions and sauté for about 5 minutes until soft.
  4. Add the Garlic and Jalapeno: Mix in minced garlic and chopped jalapeno; sauté for another 2 minutes.
  5. Incorporate the Spinach: Add spinach to the skillet; cook for 3-4 minutes until wilted.
  6. Add Seasoning: Sprinkle kosher salt over the mixture and stir well.
  7. Add Rice: Stir in Basmati rice to absorb the flavors.
  8. Pour in Water or Broth: Add water or broth, stir, and bring to a boil.
  9. Simmer: Reduce heat to low, cover, and simmer for 15-20 minutes.
  10. Check Rice: Ensure rice is tender and liquid absorbed; simmer longer if needed.
  11. Add Fresh Herbs: Fluff rice with a fork, mix in parsley and scallions.
  12. Adjust Seasoning: Taste and adjust seasoning if necessary.
  13. Serve: Serve warm, garnished with parsley or scallions if desired.

Notes

For a milder dish, adjust the jalapeno amount. Fresh ingredients yield the best flavor.
