Stuffed Mini Pumpkins

Delightful stuffed mini pumpkins filled with flavorful beef and spices, perfect for fall festivities.

Ingredients

  • Mini pumpkins
  • Ground beef
  • Pumpkin puree
  • Onion
  • Garlic
  • Herbs (e.g., thyme, sage)
  • Salt
  • Pepper
  • Cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the mini pumpkins.
  3. Scoop out the seeds using a spoon.
  4. In a skillet, cook chopped onions and minced garlic until soft.
  5. Add ground beef and cook until browned.
  6. Stir in pumpkin puree and herbs; season with salt and pepper.
  7. Stuff the mini pumpkins with the beef mixture.
  8. Place in a baking dish, add water to the bottom, and bake for 25-30 minutes until tender.
  9. If desired, sprinkle cheese on top and bake for an additional 5 minutes.
  10. Serve hot and enjoy!
