Stuffed Butternut Squash with Spinach, Bacon, and Cheese

A delightful dish that combines savory flavors with wholesome ingredients, perfect for autumn gatherings.

  • 1 large butternut squash
  • 2 cups fresh spinach
  • 1 cup cooked and crumbled bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the butternut squash in half lengthwise and scoop out the seeds.
  3. Brush the inside with olive oil and season with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a skillet, sauté the onion and garlic until translucent.
  6. Add the spinach and cook until wilted.
  7. Remove from heat and stir in the bacon and cheese.
  8. Once the squash is cooked, flip it cut side up and fill with the spinach mixture.
  9. Return to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
  10. Serve warm as a side dish.

Notes

Make sure to roast the butternut squash thoroughly for a soft texture. Feel free to use leftover bacon or different cheeses to suit your taste.
