Sausage (chicken, turkey, or plant-based)
Potatoes (Yukon Gold or sweet potatoes)
Onion
Garlic
Chicken broth (or vegetable broth)
Milk or cream (or non-dairy milk)
Spices (salt, pepper, cayenne pepper, etc.)
In a large pot, heat a splash of olive oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Remove and set aside.
In the same pot, add chopped onions and minced garlic. Sauté until the onions are translucent, about 3 minutes.
Add cubed potatoes to the pot along with the chicken broth. Bring to a boil, then reduce heat to simmer for about 15 minutes, or until the potatoes are tender.
Return the sausage to the pot. Stir in milk or cream, and add your desired spices (salt, pepper, cayenne pepper) to taste. Heat through for an additional 5 minutes.
Once heated and fully combined, remove from heat. For a thicker texture, use an immersion blender to puree part of the soup or mash a few potatoes with a fork.
Serve hot, garnished with fresh herbs if desired. Enjoy!
