Ingredients

  • Sausage (chicken, turkey, or plant-based)
  • Potatoes (Yukon Gold or sweet potatoes)
  • Onion
  • Garlic

  • Spices (salt, pepper, cayenne pepper, etc.)
  • Instructions

  • In a large pot, heat a splash of olive oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  • In the same pot, add chopped onions and minced garlic. Sauté until the onions are translucent, about 3 minutes.
  • Add cubed potatoes to the pot along with the chicken broth. Bring to a boil, then reduce heat to simmer for about 15 minutes, or until the potatoes are tender.
  • Return the sausage to the pot. Stir in milk or cream, and add your desired spices (salt, pepper, cayenne pepper) to taste. Heat through for an additional 5 minutes.
  • Once heated and fully combined, remove from heat. For a thicker texture, use an immersion blender to puree part of the soup or mash a few potatoes with a fork.
