Southern Maple Sweet Potato Casserole

A comforting and nutritious sweet potato casserole with maple syrup and nuts, perfect for any gathering.

  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup almond milk (or any plant-based milk)
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon (for filling)
  • 1/8 teaspoon ground nutmeg (for filling)
  • Pinch of ground allspice
  • 1 cup organic raisins (soaked and drained)
  • 2 cups marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss them with olive oil, cinnamon, and nutmeg.
  3. Spread sweet potatoes on a baking sheet and roast for 30-35 minutes until tender and golden brown.
  4. In a bowl, mash the roasted sweet potatoes and mix in almond milk and vanilla.
  5. Add butter, brown sugar, maple syrup, cinnamon, nutmeg, allspice, and raisins, then blend well.
  6. Transfer the filling to a greased 9×13 inch casserole dish.
  7. In a separate bowl, combine pecans and marshmallows, then spoon over the sweet potato filling.
  8. Drizzle 1/4 cup maple syrup over the topping.
  9. Bake at 350°F (175°C) for 25-30 minutes until marshmallows are golden brown.
  10. Let cool briefly before serving warm.

Notes

Make sure to opt for organic sweet potatoes for the best flavor. Soak raisins for a juicier texture.
