Soft Honey Cookies

Delightful chewy cookies sweetened with honey, perfect for any occasion.

Ingredients

  • 2 large Eggs (or 2 flax eggs for a vegan option)
  • 1/2 cup Neutral Oil (Vegetable or light olive)
  • 1/2 cup Honey (or agave nectar for vegan cookies)
  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Ground Saigon Cinnamon (Optional)
  • 1/4 teaspoon Salt
  • 1/4 cup Additional Granulated Sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. In a large bowl, mix the eggs, neutral oil, and honey (or prepared flax eggs).
  4. In a separate bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt.
  5. Gradually combine the dry ingredients into the wet ingredients until just mixed.
  6. Form 1-inch dough balls, roll in additional sugar, and place on the baking sheet with 2 inches between them.
  7. Bake for about 10-12 minutes until edges are golden and centers look slightly soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Adjust sweetness as desired and experiment with add-ins like chocolate chips or nuts.
