Soft & Chewy Matcha Almond Cookies

Delightful cookies blending almond and matcha flavors, soft on the inside and chewy, perfect for snacks or desserts.

  • 1 cup almond flour
  • 2 tablespoons matcha powder
  • 1/2 cup macadamia nuts (chopped)
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, matcha powder, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, maple syrup (or honey), and vanilla extract until smooth.
  4. Gradually add wet mixture to dry ingredients and mix until just combined.
  5. Fold in chopped macadamia nuts.
  6. Scoop tablespoon-sized amounts onto the prepared baking sheet, spacing them apart.
  7. Bake for 10-12 minutes until edges are lightly golden and centers are soft.
  8. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Experiment with different nuts or add-ins as desired.
