1 lb boneless, skinless chicken breasts or thighs
1 cup wild rice
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
4 cups chicken or vegetable broth
1 cup heavy cream
Salt and pepper to taste
Herbs (thyme, parsley, or dill)
Prep Your Ingredients: Start by chopping the onion, carrots, and celery. Rinse the wild rice thoroughly under cool water.
Layer the Slow Cooker: Place the chicken at the bottom of the slow cooker. Add the wild rice, chopped veggies, and any herbs you choose.
Add Liquids: Pour the chicken or vegetable broth over the ingredients. Season with salt and pepper according to your taste.
Set the Slow Cooker: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and the wild rice is tender.
Shred the Chicken: About 30 minutes before serving, remove the chicken, shred it with two forks, and return it to the pot.
Finish With Cream: Stir in the heavy cream to give the soup a wonderfully creamy texture just before serving.
Serve Hot: Garnish with fresh herbs, if desired, and enjoy your meal!
