Simple Lime Gelatin Salad

A refreshing and creamy lime gelatin salad that is perfect for barbecues and family gatherings.

Ingredients

  • 6 ounces lime gelatin (Two 3-ounce packages)
  • 2 cups boiling water
  • 1 quart lime sherbet
  • 8 ounces frozen whipped topping (thawed)

Instructions

  1. Boil 2 cups of water in a pot.
  2. Remove from heat and stir in 6 ounces of lime gelatin until fully dissolved.
  3. Let the mixture cool for about 15 minutes.
  4. Add 1 quart of lime sherbet and stir gently until smooth.
  5. Fold in 8 ounces of thawed whipped topping carefully.
  6. Pour the mixture into a mold or serving dish.
  7. Refrigerate for at least 4 hours until firm.
  8. Serve as desired, garnishing with lime slices or mint leaves.

Notes

Store covered in the fridge for up to 5 days. Can be made in advance for parties.
