1 lb Chicken breast, boneless & skinless
2 tablespoons Olive oil
2 Carrots, diced
2 stalks Celery, diced
1 Onion, diced
4 cloves Garlic, minced
6 cups Chicken broth
1 teaspoon Red pepper flakes
1/4 cup Fresh parsley, chopped
1 cup Pasta (e.g., orzo or ditalini)
Heat the olive oil in a large pot over medium heat.
Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.
Add the chicken breasts to the pot and cover with chicken broth. Bring it to a boil, then reduce to a simmer.
