  • 2 tablespoons Olive oil
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 Onion, diced
  • 4 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 teaspoon Red pepper flakes
  • 1/4 cup Fresh parsley, chopped
  • 1 cup Pasta (e.g., orzo or ditalini)
  • Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
  • Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.
  • Add the chicken breasts to the pot and cover with chicken broth. Bring it to a boil, then reduce to a simmer.
  • Let it simmer for about 15-20 minutes, or until the chicken is cooked through.
  • Remove chicken from the pot, shred it into bite-sized pieces, and return it to the soup.
  • If using pasta, add it to the pot now and cook according to package instructions.
  • Taste the soup and adjust seasoning with salt and pepper as needed. Stir in the fresh parsley before serving.
