Shrimp and Vegetable Stir Fry

A quick and healthy Shrimp and Vegetable Stir Fry, packed with protein and essential nutrients from shrimp and colorful mixed vegetables.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for 1 minute until fragrant.
  3. Add the shrimp and cook until they turn pink, about 3-4 minutes.
  4. Stir in the mixed vegetables and soy sauce, and continue to stir-fry for another 5-7 minutes until vegetables are tender but still crisp.
  5. Season with salt and pepper to taste.
  6. Serve immediately over cooked rice.

Notes

Serve with noodles instead of rice if preferred. Garnish with green onions or sesame seeds for added flavor.
