1 lb shrimp, peeled and deveined
8 oz smoked sausage, sliced
1 cup grits
4 cups chicken stock
1 cup shredded cheese (Cheddar)
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste
Cook the Grits: In a medium saucepan, bring chicken stock to a boil. Slowly whisk in grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until the grits are creamy. Add cheese, salt, and pepper to taste.
Sauté the Sausage: In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5-7 minutes.
Add Aromatics: Stir in the diced onion and garlic. Sauté until the onion is translucent, about 3-5 minutes.
Add the Shrimp: Raise heat to medium-high and add shrimp to the pan. Cook until shrimp turns pink and is cooked through, about 3-4 minutes. Season with salt and pepper.
Combine: Spoon grits into bowls and top with the shrimp and sausage mixture. Drizzle with a little olive oil for added flavor if desired.
