A delightful dish that combines tender chicken, colorful vegetables, and flavorful lo mein noodles in a delicious sauce. Perfect for a weeknight dinner.

Ingredients

Scale
  • 1 lb chicken breast, sliced
  • 4 oz lo mein noodles
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, snow peas)
  • 3 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. Heat sesame oil in a large pan over medium-high heat. Add sliced chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add mixed vegetables and minced garlic to the pan. Sauté until vegetables are tender, about 3-5 minutes.
  4. In a small bowl, mix soy sauce, honey, cornstarch, and water until smooth. Pour sauce over chicken and vegetables, stirring to combine, and cook for another 2-3 minutes until thickened.
  5. Add cooked lo mein noodles to the mixture, tossing to coat well.
  6. Serve hot, garnished with sesame seeds and chopped green onions.

Notes

For best flavor, use fresh chicken and vegetables. Adjust the sauce thickness if desired by varying the cornstarch. Feel free to swap noodles based on preference.
