  • 1 pound fingerling potatoes
  • 1 teaspoon kosher salt
  • 1 cup distilled white vinegar
  • 2 tablespoons olive oil
  • Freshly ground black pepper to taste

Instructions

  1. Wash the fingerling potatoes thoroughly under cool water, keeping the skin on.
  2. Slice the potatoes in half lengthwise to promote even cooking.
  3. Place the sliced potatoes in a large pot and cover with vinegar and enough water.
  4. Sprinkle kosher salt into the pot and bring to a boil over medium-high heat.
  5. Boil for 10-12 minutes until fork-tender but firm.
  6. Drain the potatoes and allow them to cool in a colander.
  7. Heat olive oil in a large skillet over medium heat.
  8. Add the drained potatoes to the skillet and cook for 5-7 minutes until golden brown.
  9. Remove from heat, season with black pepper, and toss gently.
  10. Serve warm.
