Savory Veal Shank Roast

  • 35 pounds Veal Fore Shank
  • 56 teaspoons Mustard
  • 34 teaspoons Salt
  • 23 teaspoons Black Pepper
  • 1 cup Vegetable Oil
  • 23 pounds Potatoes
  • 45 large Carrots

Instructions

  1. Prepare your kitchen and gather all the ingredients. Preheat oven to 325°F (163°C).
  2. Pat the veal shank dry and make deep crosscuts in the meat.
  3. Mix mustard, salt, black pepper, and half of the vegetable oil. Rub this onto the veal shank.
  4. Heat the remaining vegetable oil in a skillet and sear the veal shank on all sides until golden brown.
  5. Remove the shank and add chopped carrots and potatoes to the skillet.
  6. Place the veal on top of the vegetables, add 2 cups of water or broth, cover, and transfer to the oven.
  7. Cook for 2.5 to 3 hours, basting every hour.
  8. Let the roast rest for 20 minutes before slicing and serving.
