  • 2.5 pounds Rack of Lamb (frenched)
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper (fresh-ground)

Instructions

  1. Prepare the Marinade: In a bowl, mix olive oil, garlic, rosemary, honey, salt, and pepper until smooth.
  2. Marinate the Lamb: Coat the rack of lamb with the marinade in a resealable bag; refrigerate for at least 2 hours.
  3. Preheat the Oven: Heat the oven to 400°F (200°C).
  4. Prepare the Baking Dish: Let the lamb drain and place it on a baking sheet lined with foil or parchment.
  5. Roast the Lamb: Bake for 25-30 minutes for medium-rare, or 30-35 minutes for medium, checking the temperature.
  6. Let it Rest: Allow the lamb to rest for 10 minutes before slicing.
