1 lb lean ground turkey
1 cup chopped bell peppers (mixed colors)
1 cup sliced zucchini
1 medium red onion, chopped
3 cloves garlic, minced
2 tbsp extra virgin olive oil
Salt and pepper to taste
1 tsp paprika
2 cups cooked rice (white or brown)
Fresh herbs (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine bell peppers, zucchini, onion, garlic, olive oil, salt, pepper, and paprika. Toss well.
Spread the prepared vegetables on a baking sheet and roast for about 20 minutes.
While the vegetables are roasting, heat a skillet over medium-high heat and cook the ground turkey until browned, about 5-7 minutes. Season as desired.
Mix the roasted vegetables with the cooked turkey in the skillet.
Serve over the cooked rice of your choice, garnished with fresh herbs if desired.
