Savory Chicken Thighs and Rice

A quick, comforting one-pan meal featuring tender chicken thighs and fluffy rice, perfect for busy weeknights.

  • 1 pound Chicken Thighs (skin-on or skinless)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika (smoked for extra flavor)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Unsalted Butter
  • 1 medium Onion (Yellow or White)
  • 3 cloves Garlic
  • 1 cup Long-Grain White Rice
  • 2 cups Chicken Broth
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 2 tablespoons Fresh Parsley

Instructions

  1. Pat chicken thighs dry with paper towels and season with salt, pepper, and paprika.
  2. Heat olive oil in a large pan over medium-high heat, then add butter until melted.
  3. Add the chicken thighs and brown for 5-7 minutes on one side, then flip and cook for another 5 minutes.
  4. Remove the chicken and set aside on a plate.
  5. Add chopped onion to the pan and sauté for 3-4 minutes until soft. Add minced garlic and cook for another minute.
  6. Stir in rice and toast for 1-2 minutes, then add chicken broth and stir in onion powder and garlic powder.
  7. Return chicken thighs to the pan, nestling them into the rice, and bring to a gentle simmer.
  8. Cover and reduce heat to low, cooking for 20-25 minutes until rice is tender.
  9. Check the rice and chicken doneness, adding more time if needed.
  10. Remove from heat and let sit for 5 minutes covered before serving with fresh parsley.

Notes

For added flavor, marinate the chicken thighs before cooking. Feel free to add additional vegetables or change up the broth.
