Roasted Turnips and Carrots

  • 2 cups carrots, peeled and sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs (such as thyme or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the diced turnips and sliced carrots with the butter and olive oil until well coated.
  3. Sprinkle salt, black pepper, and dried herbs over the vegetables. Toss again to evenly distribute the seasoning.
  4. Transfer the seasoned vegetables to a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, stirring halfway through for even cooking, until tender and slightly caramelized.
  6. Remove from the oven and serve warm as a side dish.
