Roasted Potatoes and Broccoli

A delicious and healthy side dish combining roasted potatoes and broccoli, perfect for complementing any meal.

Ingredients

  • 4 medium potatoes, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the cut potatoes and broccoli florets.
  3. Drizzle the vegetables with olive oil. Add the minced garlic, dried rosemary, salt, and pepper. Toss to coat.
  4. Transfer the seasoned vegetables onto a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until potatoes are golden and broccoli is tender.
  6. Remove from the oven and sprinkle with grated Parmesan cheese.
  7. Serve warm alongside your favorite main course.

Notes

For extra crispiness, broil the vegetables for a couple of minutes after roasting. You can experiment with different vegetables and spices.
