Quinoa and Sweet Potato Bowl

  • 1 cup quinoa
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized pot, cook the quinoa according to the package instructions, usually about 15-20 minutes.
  3. In a large bowl, toss the diced sweet potatoes with olive oil, paprika, cumin, salt, and pepper until evenly coated.
  4. Spread the sweet potatoes on a baking sheet in a single layer and roast for about 25-30 minutes until tender and lightly browned.
  5. Once both the quinoa and sweet potatoes are cooked, serve the quinoa and roasted sweet potatoes in a bowl and garnish with fresh herbs if desired.
