Pumpkin Pasta

A delightful twist on traditional pasta, this creamy pumpkin pasta is packed with nutrients and perfect for any season.

Ingredients

  • 1 cup pumpkin puree
  • 8 oz pasta (like penne or fusilli)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh sage or parsley for garnish

Instructions

  1. Cook the pasta according to the package instructions. Once al dente, drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add pumpkin puree and vegetable broth to the skillet. Stir well and cook for about 5 minutes until flavors meld.
  4. Stir in the cooked pasta and Parmesan cheese, mixing evenly. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh sage or parsley.

Notes

For a vegan option, replace Parmesan with nutritional yeast and use vegan broth.
