Pumpkin BBQ Jalapeño Meatballs

A delightful twist on traditional meatballs featuring pumpkin puree and a spicy kick from jalapeños, coated in BBQ sauce.

  • 1 lb ground beef
  • 1/2 cup pumpkin puree
  • 1/2 cup BBQ sauce
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 jalapeño, sliced (reserve some for garnish)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Ground turkey or chicken for a leaner option
  • Gluten-free breadcrumbs for a gluten-free version

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, pumpkin puree, BBQ sauce, breadcrumbs, egg, minced garlic, and jalapeño slices. Season with salt and pepper, then mix until well combined.
  3. Scoop out portions of the mixture and shape them into 1-inch meatballs. Place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, checking for an internal temperature of 160°F for doneness.
  5. While baking, heat BBQ sauce in a saucepan and add reserved jalapeño slices. Simmer for a few minutes.
  6. Once meatballs are baked, toss them in the warm BBQ sauce until fully coated.

Notes

For a gluten-free version, use gluten-free breadcrumbs. You can also use ground turkey or chicken for a leaner option.
