Perfect Christmas Pinwheel Cookies

  • 2/3 cup unsalted butter (softened)
  • 2/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • a few drops red gel food coloring
  • a few drops green gel food coloring
  • to taste red sanding sugar (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. Sift together the flour, salt, and baking soda in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients and mix until combined.
  6. Divide the dough in half and color one half red and the other green.
  7. Roll out each colored dough into a rectangle about 1/4 inch thick.
  8. Layer the green dough on top of the red and roll into a tight log.
  9. Wrap in plastic wrap and refrigerate for at least 1 hour.
  10. Slice into 1/4-inch thick pinwheels and place on a baking sheet lined with parchment paper.
  11. Sprinkle with red sanding sugar if desired.
  12. Bake for 8-10 minutes until the edges are slightly golden.
  13. Allow to cool on the baking sheet before transferring to a wire rack.
