Paleo Sweet Potato Apple Breakfast Bake

A nutritious and delicious breakfast bake made with sweet potatoes, apples, and eggs, perfect for a cozy morning.

  • 2 large sweet potatoes, peeled and diced
  • 2 apples, diced
  • 1 cup raisins
  • 4 eggs
  • 1/2 cup almond milk
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the diced sweet potatoes, diced apples, raisins, and optional chopped nuts.
  3. In a separate bowl, whisk together the eggs, almond milk, cinnamon, and your choice of honey or maple syrup.
  4. Pour the egg mixture over the sweet potato mixture and stir gently until well mixed.
  5. Grease a baking dish and pour the combined mixture into it, spreading it out evenly.
  6. Bake for 30-40 minutes until sweet potatoes are tender and the top is golden brown.
  7. Allow the breakfast bake to cool for 5-10 minutes before serving.
