Oven-Roasted Cod with Cherry Tomatoes and Thyme

A delicious and healthy oven-roasted cod dish paired with juicy cherry tomatoes and aromatic thyme, perfect for family dinners or special occasions.

  • 500 grams of cod fillets (about 4 fillets)
  • 500 grams of cherry tomatoes, halved
  • 1 medium onion, finely chopped
  • 1 clove of garlic, minced
  • 4 sprigs of fresh thyme
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F). In a large baking dish, spread the chopped onions, minced garlic, and halved cherry tomatoes. Drizzle 1 tablespoon of olive oil over the vegetables and season with salt and pepper. Toss gently.
  2. Pat the cod fillets dry with paper towels. Heat the remaining olive oil in a skillet over medium-high heat and sear the cod for 2-3 minutes on each side until golden brown.
  3. Transfer the seared cod to the baking dish over the vegetables. Sprinkle fresh thyme and drizzle lemon juice on top.
  4. Roast in the oven for 15-20 minutes, or until the fish flakes easily with a fork and tomatoes are soft.
  5. Serve warm with a drizzle of extra lemon juice if desired.

Notes

For dietary restrictions, you can substitute cod with other white fish. Fresh herbs deliver better flavor than dried.
