If you want to brine your chicken pieces, mix water, salt, and sugar. Soak the chicken for at least 30 minutes, then pat dry.
In a bowl, pour the buttermilk and season with a bit of salt and pepper. Dredge each piece of chicken in the buttermilk, allowing the excess to drip off.
In another bowl, mix breadcrumbs, garlic powder, paprika, salt, and pepper. Ensure the mixture is well-combined.
Dip each chicken piece in the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they stick well.
Line a baking sheet with aluminum foil and place a cooling rack on top. Arrange the coated chicken on the rack. Bake for 35-45 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
