Orange Cranberry Bread

A delightful bread combining tart cranberries and refreshing orange zest, perfect for breakfast or snacks.

  • 1 cup fresh or frozen cranberries
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 cup powdered sugar
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix flour, sugar, baking powder, and salt in a large bowl.
  3. In another bowl, whisk together orange juice, vegetable oil, eggs, vanilla extract, and orange zest.
  4. Combine wet and dry ingredients, mixing until just combined.
  5. Fold in cranberries gently.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Prepare glaze by mixing powdered sugar with orange juice until smooth.
  9. Once cooled slightly, drizzle glaze over the bread.
  10. Let cool completely before slicing.
