Orange Cranberry Bread

A delightful bread combining bright citrus flavors with tart cranberries, perfect for breakfast, snacks, or dessert.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a standard loaf pan.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. Stir in the chopped cranberries.
  5. In another bowl, combine orange juice, vegetable oil, eggs, zest, and vanilla. Whisk until combined.
  6. Pour the wet mixture into the dry ingredients and mix until just combined.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, testing for doneness with a toothpick.
  9. Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Mix powdered sugar and orange juice for the glaze and drizzle over the cooled bread.

Notes

For a sweeter variation, add chocolate chips. To make it crunchier, consider adding chopped nuts or seeds.
