Orange Cranberry Bread

A delightful bread combining the tartness of cranberries with the bright flavor of oranges, perfect for breakfast or a sweet treat.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. Stir in the chopped cranberries.
  4. In another bowl, whisk together orange juice, oil, eggs, orange peel, and vanilla extract.
  5. Combine the wet and dry ingredients until just mixed.
  6. Pour the batter into the loaf pan and smooth the top.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Cool the bread in the pan for 10 minutes then transfer to a wire rack to cool completely.
  9. Optionally, drizzle a glaze made of powdered sugar and orange juice over the cooled bread.

Notes

Serve it plain, with butter or cream cheese, or as a dessert with ice cream.
