Orange Cranberry Bread

A delightful bread that perfectly balances sweet and tart flavors, made with fresh cranberries and vibrant orange zest. Ideal for breakfast, snacks, or desserts.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cranberries (fresh or frozen)
  • 1 orange (zested and juiced)
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the zest and juice of the orange, orange juice, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients, being careful not to overmix. Fold in the cranberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, checking for doneness with a toothpick.
  7. While the bread is baking, mix the glaze by combining powdered sugar with orange juice.
  8. Once baked, cool the bread in the pan for 10 minutes, then turn it out onto a wire rack to cool completely and drizzle with glaze before serving.

Notes

For extra crunch, consider adding nuts to the batter. Store properly in an airtight container to keep fresh.
