Orange Cranberry Bread

A delightful bread combining orange and cranberry flavors perfect for breakfast, snacks, or gifts.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries
  • 1 cup powdered sugar for glaze
  • 2 tablespoons orange juice for glaze

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with butter or cooking spray.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, mix the orange juice, vegetable oil, eggs, and grated orange zest.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in the cranberries.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
  10. For the glaze, mix powdered sugar with orange juice until smooth and drizzle over the cooled bread.
