Orange Cranberry Bread

A delicious and vibrant bread combining fresh cranberries and sweet orange zest, perfect for breakfast, brunch, or a festive snack.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons orange zest
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Add the chopped cranberries to the dry mixture and stir.
  5. In another bowl, combine the orange juice, vegetable oil, eggs, and orange zest. Beat until well combined.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.
  10. To make the glaze, mix the powdered sugar and orange juice until smooth, then drizzle over the cooled bread.

Notes

For best results, use fresh cranberries. Store bread at room temperature for 2-3 days, in the fridge for up to a week, or freeze for up to 3 months.
