1 lb Italian sausage (sweet or spicy)
4 cups kale, chopped
3 medium potatoes, sliced
1 onion, diced
2 cloves garlic, minced
32 oz low-sodium chicken broth
1 cup heavy cream
Salt and pepper to taste
In a large pot, brown the Italian sausage over medium heat until it’s cooked through, about 5-7 minutes.
Add the diced onion and sauté until translucent, around 3 minutes, then stir in the minced garlic and cook for an additional minute.
