1 lb boneless, skinless chicken breast
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
6 cups chicken broth
9 lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
1–2 cups fresh spinach or kale
1 teaspoon Italian seasoning
Salt and pepper to taste
In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned on both sides, about 6-8 minutes. Remove and shred.
