One-Pot Macaroni Cheeseburger Soup

A delightful combination of macaroni and cheese with a juicy cheeseburger, made in one pot for easy preparation and clean-up.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste
  • Diced tomatoes or pickles (optional)
  • Mustard or ketchup (for serving)

Instructions

  1. In a large pot over medium heat, brown the ground beef for about 5-7 minutes until no longer pink, then drain excess fat.
  2. Add the diced onion and cook for about 3 minutes until translucent.
  3. Pour in the beef broth and bring to a boil.
  4. Add the elbow macaroni, reduce heat to a simmer, and cook for 8-10 minutes until al dente.
  5. Remove from heat, stir in the cheddar cheese and milk until cheese is melted.
  6. Season with salt and pepper to taste, and stir in diced tomatoes or pickles if desired. Serve warm with mustard or ketchup on top.

Notes

For extra flavor, consider topping with fresh herbs, crumbled bacon, or additional cheese. Feel free to customize with different meats or vegetables.
